The American Bresse
About the Breed
American Bresse chickens are a fairly recent addition to U.S. poultry, arriving from France in 2011. They were developed to mirror the traditional French Bresse—an iconic breed with more than five centuries of history and a global reputation for exceptional table quality. The American strain preserves the hallmark look: a bright red comb, clean white plumage, and blue‑tinted legs, echoing the colors of both the French and American flags.

Due to import restrictions and the protected status of true French Bresse under AOP regulations, bringing authentic French stock into the U.S. is extremely difficult. However, American Bresse chickens are widely available through dedicated breeders across the country. Many offer chicks, juveniles, and guidance for raising and maintaining healthy flocks.

This breed is especially admired for its rapid growth and outstanding meat characteristics. Compared with many other dual‑purpose breeds such as Rhode Island Reds or Plymouth Rocks, American Bresse birds reach market weight more quickly while still breeding true, unlike hybrid broilers.
Their meat is known for its depth of flavor—tender, WELL MARBLED which is improved upon by a special diet, and rich—with tasting notes often described as buttery, nutty, or creamy. Because of this culinary reputation, they are sometimes referred to as the “Queen of Poultry,” and they remain a favorite among chefs and food enthusiasts.
Egg Quality & Production
American Bresse hens are strong layers, often starting production at about 18 weeks of age. During the longer‑day seasons—spring through fall—they frequently lay close to one egg per day, with many hens reaching or surpassing 250 eggs per year. Their eggs are medium in size with a creamy shell tone, making them a practical choice for home flocks or small farm operations.
Temperament and Behavior
American Bresse chickens tend to be gentle, steady‑natured birds with a strong instinct for foraging. They excel in pasture‑based environments where they can spend much of the day hunting for insects, greens, and other natural foods, which is how they are cared for here at Skull Creek Ranch.
